Installation
Refer to installation manual for details about plants needs and to local regulations
Consider that unit can be transported only on pallet never use transpallet/forklift to lift/transport the unit without pallet
When lifting the appliance, consider the weight of the appliance itself and therefore use suitable lifting devices or a suitable number of people
In case of heat sources at a height, not less than that of the oven base, a heat shield can be applied as an accessory
We strongly suggests preparing for installation by generating a dedicated installation ticket and inspection the site to avoid unexpected issues and agree on plants details.
Upon arrival at destination, always check for correspondence between the ordered material, the received quantities.
The environment in which the oven is installed must be properly ventilated and there must be sufficient space to guarantee ease of servicing of the appliance, thus avoiding additional maintenance costs.
There must be a 50mm clearance around the appliance to allow proper ventilation.
Do not install the appliance near flammable walls or appliances, do not obstruct the air intakes and maintain a suitable distance(400mm) from other heat sources
Unit leveling
Correct levelling is essential for a good installation for this reason all units are equipped with adjustable foots.
Wrong levelling can not only lead to cooking problems but will certainly cause steam and water leaking from the door.
Table units are equipped with adjustable foots.
For proper leveling if unit is installed on a table, at first adjust the rear feets, to level the back, then proceed to adjust the leveling of the front with the front feet.
Check the leveling front/rear on the left and on the right and if needed adjust from the front or from the back. Finally check diagonals leveling
Installation protocol
1. Door at cold conditions: check the door alignment and closure, for floor units insert the trolley and check tightness. “Door open” message has to disappear
2. Washing system: Start the wash relay from service level and check that the rotating nozzle is working, check the tightness of the seals. Activate the pumps to fill the system
3. Oven chamber fan: select a cooking and check rotation of the chamber fan in both directions.
4. Seals: Check the seals for the hydraulic circuits
5. Cooking: Check boiler pre-heating, Operation in steam mode 100°C, combi mode 160°C, dry mode 160°C 0% humidity, Fast-dry function, opening and tightness of door gasket, cooling fans proper blowing (flow direction)
6. Absorption Check: Check power consumption / dynamic, static supply pressure and combustion
7. For gas appliances check the flame recognition and reset disconnecting the flame detection cable
8. Probes: Diagnostic check of values of SC, SD probes and core probe
9. Cooling: Check cooling with door open and door closed, humidifier

Door adjustment
Proper adjustment of the door is essential for proper operation and to avoid dangerous steam and water leaks during cooking and washing.
The door has the inner glass which is a flat surface that closes on the front gasket; to close the door correctly, proper leveling of the unit is mandatory.
To adjust the door, it is possible to act on 3 points
Upper hinge
Loosening the screws on the top of the door hinge is possible to adjust the distance of the door from the front side.

Opening the door is possible to access to the lower hinge adjustment plate fixed by two screws; loosing them possible to adjust the distance of the door from the front to the underside.

Locking tooth
The locking tooth allows you to adjust the distance of the door to the opposite side of the hinge.
To adjust loosen the nut and screw it / unscrew it one turn at a time without losing the position. To fix it tighten the nut
Door handle
Door handle is composed by the standard handle plus
The external handle is fixed with a torks screw to the mechanism which include the dool lodking device.
It’s very important to properly fix the screw and to avoid leaving any gap to the handle coupling mechanism
We recommend using a suitable tool to develop the right tightening torque, therefore not a simple L-key but a Torx T20 screwdriver
Gasket replacement
The front gasket is made of high-quality silicone; its life span is about a year; the duration is however strongly subject to the type of cooking. In case the unit is mainly used for steaming the duration can be a few years in case of high temperatures with and fatty food and poor cleaning can be a few months
To replace the gasket
- remove the existing gasket pulling out from his groove;
- remove all residues and clean the groove
- insert the new gasket on the four corner than insert the gasket on the middle point and proceed in this way in order to avoid any tension on the gasket (see picture with part of sequence as example)
- When finish check for any stress on the gasket and on the corners
- Check the door distance and adjust if needed.
Warning
if the gasket is pulled while inserting it can later curl up and door will not be tight.
After replacing the gasket check door adjustment and in care reset door adjustment to avoid squeezing to much the new gasket.
Washing gasket
It is recommended to replace the washing system gasket kit, LAR70045120, at latest every second year.
In case of high temperature cooking with frequent washing programs, it is recommended to replace it annually
1. Remove the protective drip tray cover from the washing flange by unscrewing the two (2) screws that secure it.
2. Turn the washing arm until the grain that connects the gearmotor to the rotating shaft is accessible.
3. Once the grain has been loosened, remove the washing gearmotor.
Before reassembling the gearmotor, check the water tightness by temporarily powering the appliance and activating the solenoid valve from the service level.
4. Remove the rotating arm by unscrewing it from the chamber side and using a self-locking pliers to hold the hexagonal head of the rotating shaft
5. Remove the seeger ring that holds the rotating shaft on the cooking chamber side and then the washer below.
6. Remove the rotating shaft by sliding it off the flange on the compartment side and replace the radial seal.
7. Reassemble in reverse order using the new washer and new seeger ring.
