VENTILATION SYSTEM

The fundamental part of an oven is the ventilation system that must spread the heat evenly throughout the cooking cabinet

The System

The system consists of a fan, two fans on floor units, driven by a motor, external to the cabinet, and a deflector that ensures the correct distribution of air flows favoring the suction of air from the cabinet to the fan center and creating a pressure that directs the air flows to the sides of the cooking cabinet so that they can reach the opposite side of the cooking cabinet

 

Warning

To manage possible complaints, consider that to better distribute the heat on the cabinet is important that the delta temperature between the air behind the deflector and the air sucked by the cabinet fan is as low as possible. To manage this delta temperature chefs can act on the air speed and a lower cooking temperature

 

Air Deflector

The deflector is hinged with two pins on the bottom and fixed by two screws on the top side.

Warning: the deflector must be present and well fixed, otherwise an incorrect diffusion of air flows and, in its absence, a practically zero flow of air in the cooking cabinet

Grease Filter

It is possible to apply on the deflector the grease filter accessory that is hooked to the deflector and that must be daily removed and washed separately.

Warning: To access the deflector you must first remove the right-hand side rack support.

 

Fan Wheel

The chamber fan sucks the air from the cooking chamber and pushes it on the heating elements to cool them and transport the heat into the cooking chamber, on the products to be cooked.

Fan Fixing

The coupling between fan and motor is conical and, since the fan rotates in both directions, it must properly tightened.

To remove the fan, you need a puller with code LA75401250

It is essential for good operation that the fan is balanced; therefore, deformations of the blades or the accumulation of limestone are absolutely to be avoided.

Warning: Be careful not to deform the fan blades during removal operations or with cold water jets on the hot metal.

A deformed fan or scale on it initially involves vibrations than, on long term, causes damage to the motor bearings up to a mechanical breakage of the fan itself

 

Motor del ventilador

The motor LAR65041040 is monophase 2 speeds and is unique for all models and is fixed with 4 hexagonal head screws.

The motor is controlled by the RD and RS relays, which control left and right rotation, and the 5µF capacitor.

As an option, the RB relay and the 10µF capacitor are added with the second speed

The motor is protected by a thermal contact which when it opens (160°C/320°F.

When protection switch deactivates RS, RD

and interrupts the signal at I25 of the I/O generating alarm A01.

To reset act on P377

Warning: also a bad contact on the main terminal or a missing phase will cause A01 because of missing voltage on I25

 

Sealing gasket

To avoid infiltration of water and steam into the electrical compartment, a sealing gasket is fitted between motor and the cabinet.

The gasket must be verified and if needed replaced with inspection every 12 months

  1. Remove the tray holder and the air deflector *
  2. Remove the humidifier tube*
  3. Remove the fan *
  4. Remove the motor *
  5. Remove the old gasket (accessed from the rear, engine side)
  6. Install the new gasket (inside the gasket is high viscosity silicone grease)
  7. Reposition the motor, avoiding overtightening the screws
  8. Check that the motor turns freely and then proceed to tighten the fixing screws.
  9. Refit the fan by tightening the fixing screw *
  10. Check correct operation
