Door adjustment stand units

 

 

Upper hinge

Loosening the screw on the top of the door is possible to adjust the distance of the door from the front side.

To adjust the door on the top side is needed to loose the 3 screws of the top hinge

Proper adjustment of the door is essential for proper operation and to avoid dangerous steam and water leaks during cooking and washing.

The door has the inner glass which is a flat surface that closes on the front gasket; to close the door correctly, proper leveling of the unit is mandatory.

To adjust the door, it is possible to act on 3 points

 

Lower hinge

Removing the plastic cover on the underside of the door will be accessible the bolt to adjust the distance of the door from the front to the underside.

The lower hinge is fixed to the front with 4 screws; remove/adjust this position only in extreme cases.

 

Locking tooth

The locking tooth allows you to adjust the distance of the door to the opposite side of the hinge. To adjust loosen the nut and screw it / unscrew it one turn at a time without losing the position. To fix it tighten the nut

 

Door adjustment floor units

 

Also on floor units is mandatory a proper door adjustment but in those units the trolley is part of the tightiness.

The door has the internal glass that is a flat surface which close on the front gasket. To properly close the door is mandatory a proper leveling of the unit.

To adjust the door, it is possible to act on 5 points

Upper hinge

Loosening the bolt on the top of the door is possible to adjust the distance of the door from the front side.

The top hinge is fixed to the front side with 3 screws and possible adjustments are small.

Lower hinge

Loosing the fixing screws is possible to adjust the distance of the door from the front.

The lower hinge is fixed to the front with 4 screws; remove/adjust this position only in extreme cases.

Upper and lower lock

the upper and lower lock let adjust the door distance on the opposite side of the hinge.

It’s very important to proper adjust those holder because if door is too thigh the 2 big pin  that locks the door can damage mechanically the door

Central lock

The central lock is not adjustable and has the aim to center the door and to lock it rotating the central lock and moving up and down the two big bars into the upper and lower locks

Also on floor units is mandatory a proper door adjustment but in those units the trolley is part of the tightiness.

Door handle stand units

An external handle

Fixed with a torks screw to the mechanism which include the dool lodking device. It’s very important to properly fix the screw and to avoid leaving any gap to the handle coupling mechanism

Door handle on stand units is composed by the standard handle plus

 

Door handle floor units

 

An internal mechanism where the handle is screwed.

A second internal part screwed to the firstone which move the central lock and the 2 long bar wich act on the upper an lower lock.

Door handle on floor units is composed by the standard handle plus.

Gasket replacement

 

To replace the gasket

-  remove the existing gasket pulling out from his groove;

-  remove all residues and clean the groove

-  insert the new gasket on the four corner than insert the gasket on the middle point and proceed in this way in order to avoid any tension on the gasket (see picture with part of sequence as example)

-  When finish check for any stress on the gasket and on the corners

-  Check the door distance and adjust if needed.

 

Warning: if the gasket is pulled while inserting it can later curl up and door will not be tight.

 

After replacing the gasket check door adjustment and in care reset door adjustment to avoid squeezing to much the new gasket.

The front gasket is made of high-quality silicone; its life span is about a year; the duration is however strongly subject to the type of cooking. In case the unit is mainly used for steaming the duration can be a few years in case of high temperatures with and fatty food and poor cleaning can be a few months

 

Floor units have an additional gasket that close the door on the trolley flange. This gasket is located on the bottom part of the door and must be inserted as per the front gasket described just before

 

Washing gasket

 

To proceed with the replacement of the gaskets, after securing the appliance by disconnecting it from the power supply, remove the access panel to the technical compartment

It is recommended to replace the washing system gasket at the latest after 30 months. In the case of high temperature cooking with frequent washing programs, it is recommended to replace it with higher frequency.

 

1. Remove the rotating arm by unscrewing it from the chamber side and using a self-locking pliers to hold the hexagonal head of the rotating shaft.

2. Turn the washing arm until the grain that connects the gearmotor to the rotating shaft is accessible.

3. Once the grain has been loosened, remove the washing gearmotor.

4. Remove the rotating arm by unscrewing it from the chamber side and using a self-locking pliers to hold the hexagonal head of the rotating shaft.

5. Remove the seeger ring that holds the rotating shaft on the cooking chamber side and then the washer below.

6. Remove the rotating shaft by sliding it off the flange on the technical compartment side.

 

Access to the LED bar

 

The LED bar that illuminates the chamber is located in the door upright on the hinge side and is protected by opal glass and the internal glass of the door. Power to the LED bar comes via a cable that passes through the door hinge (bottom for desktop units, top for floor units)

To access the LED bar, open the door and

a) Release the inner glass from the retaining springs

b) Open the inner glass

c) Remove the drip tray fixed with two screws from the bottom side and attached from the top side (only for 6-tray models because the larger models have the protective glass divided into several parts)

 

d) Remove the protective glass by pulling it out from the underside (only for 6-tray models because larger models have the protective glass stopped by a removable bracket)

e) Access the led bar fixed with 3 screws to the mast

Warning: be very careful when handling the replacement LED bar because it is sensitive to electrostatic discharge. Always install the insulating spacers supplied with the spare.

 

Flushing gasket

 

Before reassembling the gearmotor, check the water tightness by temporarily powering the appliance and activating the solenoid valve from the service level

Do not remove the o-ring on the front side of the rotating arm is not really needed to replace and is too hard to remove and replace

7. Remove the radial seal and replace it

8. Reassemble using the new washer and the new seeger.

 

Descaling

Prerequisites

To use the guided descaling program you need

- Combiboiler DS010

- Pump for chemicals

- Personal protective equipment (gloves, glasses)

- Clean the cooking camera and cool the appliance.

In case of explicit request of the appliance, to reactivate the Calout function disabled by non-compliance with the system requests, or in the case of an excessive formation of limestone in the boiler, it is possible, only for qualified technicians, to access the boiler descaling function

To access the descaling program

A) Go to the Service level

B) Select the menu boiler

C) Select the boiler decaling program

 

Descaling procedure

A) The fully guided procedure begins with a boiler cooling and discharge phase.

B) When prompted by message slowly introduce, through the inlet of the steam in cabinet, the indicated amount of Combiboiler using a pump for chemicals.

C) Confirm continuing the program.

D) The phases will follow each other for about 70 minutes until the end of the process, which will end with a boiler drain.

Recommendations

- The procedure must be performed by a qualified technician.

- Use only Combiboiler DS010.

- Use an adequate pump for chemicals products

- The product should be poured with caution; any leaks could damage the cooking camera.

- Oversee the procedure, do not delegate the task to the end customer.

- Do not interrupt the procedure because the product may damage the boiler or contaminate food.

- In case of emergency the procedure can be interrupted with password; the boiler must be emptied and rinsed manually.

- At the end is recommended at least a visual inspection of level probes.

- Carry out a thorough rinsing of the camera from any residue of chemicals.
