The System

The system is composed of a fan, two for the floor units, driven by a motor, external to the room, and a deflector which guarantees the correct distribution of the air flows.

The system draws air from the chamber, in the center, and creates a pressure, behind the deflector, which directs the air flows along the walls of the cooking chamber so that they can reach the opposite side of the chamber and then be recirculated.

The fundamental part of an oven is the ventilation system that must spread the heat evenly throughout the cooking cabinet

Warning

To manage possible complaints, consider that to better distribute the heat on the cabinet is important that the delta temperature between the air behind the deflector and the air sucked by the cabinet fan is as low as possible.

To manage this delta temperature chefs can act on the air speed and a lower cooking temperature

Grease Filter

It is possible to apply on the deflector the grease filter accessory that is hooked to the deflector and that must be daily removed and washed separately.

Warning: To access the deflector you must first remove the right-hand side rack support.

The deflector is hinged with two pins, three pins on floor units, on the bottom and roof of the cooking cabinet and is fixed by two hooking pins from the front side.

Warning: the deflector must be present and well fixed, otherwise an incorrect diffusion of air flows and, in its absence, a practically zero flow of air in the cooking cabinet

The deflector of the baking models is equipped with additional diffusers that further improve air diffusion

Fan Fixing

The coupling between fan and motor is conical and since the fan rotates in both directions, to prevent the fixing screw from loosening, there is a hollow screw and a counter-screw that ensures tightening.

To remove the fan, you need the puller with code LA75401230

The cooking cabinet fan sucks the air from the cooking chamber and pushes it onto the heating elements in order to cool them and transport the heat into the cooking cabinet, and on the products to be cooked.

It is essential for good operation that the fan is balanced; therefore, deformations of the blades or the accumulation of limestone are absolutely to be avoided.

Warning: Be careful not to deform the fan blades during removal operations or with cold water jets on the hot metal.

A deformed fan initially causes vibrations and subsequently damages the motor bearings up to the mechanical failure of the fan itself

Fan Fixing

The motor, LAR65045070, is brushless and is common to all models.

it is fixed with 4 hexagonal head bolts, two for each vertical upright of the cooking chamber.

Fan Safety

The motor inside the windings has a bimetallic contact that acts as thermal safety. The thermal of the motor acts on the power supply of the inverter which is therefore no longer able to power it generating the alarm A01.

The motor is electrically controlled by the inverter and is therefore independent of the electrical connection of the phases; the inverter also performs the function of motor brake.

Sealing Gasket

The sealing gasket is held in place by a flange positioned inside the cabinet and fixed by a counter-flange outside the cabinet.

Before fixing the flange in the cabinet make sure that the gasket and flange are well centered on the shaft.

Only tighten the flange nuts after the motor has been secured.

It is essential that steam and water are retained in the cooking cabinet and that they cannot pass into the electrical compartment; for this reason a sealing gasket LA70020080 is installed on the shaft.

 

Maintenance

It is important, to ensure the longevity of the motor, to check annually for any infiltration from the motor shaft and replace the sealing gasket in advance, at least every 30 months.

We recommend offering the customer an inspection towards the end of the warranty period to avoid subsequently non-refundable breakdowns.

 

Replacement

In case the motor is removed/replaced, when reassembling it:

- first fasten the fixing screws of the motor without tightening them in place,

- then place the sealing gasket and center the cover of the relative flange and secure with the 3 fixing bolts.

Only then, tighten the 4 fixing screws of the motor and finally check the positioning of the cover of the sealing flange to avoid that there is a point where the shaft resists, which could cause the seal to wear in a short time, and fix it

 

Inverter

 

The inverter LA65141050 is an electronic board that communicate via BUS with the base board and protects the system, also acting as a limiter in case of motor overcurrent or fan blocks.

Warning: the inverter has an internal section dcwait some seconds to let capacitors discharge before operating on it

The motor is controlled by an inverter (one for each motor) which, based on the model and settings, regulates the speed and, therefore, the speed of the air flow and the temperature distribution.

Warning: on the 061 model, also 161-06, the motor runs at higher speeds to compensate for the fan which is smaller. For the higher rotation speed, in some situations, the inverter could, automatically, slightly reduce the speed to allow better cooling.
