Function Scheme

 

The simplest oven for vertical cooking is the convection oven, whereby a fan creates an air flow, which by cooling the heating elements, transfers the heat into the cooking cabinet.

 

               

To distribute the heat evenly in the cooking cabinet it is necessary to generate a well-directed air flow; for this purpose, an air deflector plate is installed, positioned in front of the fan, which forces the air to follow the well-defined paths.

To better improve the heat transfer, the fan spin in both direction granting same time per each direction based on cooking time.

 

Of course, temperature must be controlled.

There is an SC temperature probe that transmits the information to the control board.

To ensure the safety of the system there is also a safety thermostat F2, which acts directly on the power supply to the C6, which is the safety contactor, and which isolates the power to the components if activated

 

               

The simplest combination oven produces steam by injecting water into the cooking cabinet.

 

     
   

In LAINOX appliances there is always an S1 solenoid valve, with an output flow reducer, and a PA pressure switch in parallel to detect the presence of water.

Water is sprayed directly on the centre of the fan and the air flow assists in breaking up the water droplets, thus facilitating in complete evaporation.

A water flow regulator lets inject the proper water quantity

 

           

The injection of water into the cooking cabinet and its consequent evaporation would increase the pressure; it is therefore necessary in the combination ovens to insert an exhaust system.

In the exhaust system there is an SD temperature probe that allows you to control the humidity level in the cabinet

         

 

To improve temperature measurement on SD, on premium models, there are two condensation nozzles, controlled by SD/S5, which, by spraying cold water, reduce the temperature in the exhaust pipe and helps the exchange of steam in the cooking cabinet

 

While humidity is measured using the SD/S5, the adjustment is made using the FastDry system activated by V2, which opens, and connects the outside with a tube located next to the fan. The rotation of the fan, thanks to the Venturi effect, creates a depression that sucks the air from the external environment and expels moisture through the vent pipe and the drain.

 

On Naboo and Sapiens from the past the FastDry was managed by a cap and a camma moved by a motor gear; the motor was activated up to the top position by the camma and closed activating the camma for few seconds to le the cap fall down in closing position.

 

   
                           

From 2023 the cap was replaced by a flap controlled by a motor and a dedicated control board.

Activating the motor the flap move up to the end position created by the body of the device; the control board measuring the current detect the final position of the flap.

Warning: when replacing the flap or the motor check first the original assembly than assemble as in origin and check the proper connection of + which must be on the red dot terminal

 

                     

If the appliance is equipped with a steam generator, this if filled via solenoid valve S2 (if S2 is present, PA is not); of course, there will be a dedicated heating system.

The temperature of the steam generator is controlled by SB and limited by F3, which is activated when the temperature reaches 150°C and acts directly on the supply to C6, as already described for F2
