Convection
The convection and impingement systems, visible on pictures below, are the combination of the perfect evenness and the strong heat transfer on the surface of the product.
Both systems are using the air flow generated by the fan and components are:
Catalyst
To avoid producing smoke and smell Oracle has a catalyst to reduce those negative effects. Catalysator works properly with air temperature above 250°C; consider this value to manage any customer claim
Catalysator do not need maintenance but if unit is not regularly cleaned and if products are plenty of grease possible the catalysator reduce his efficiency because blocked by dirty and carbon residues; possible to try running few hours at 300°C if nothing change replace the component.
Impingement

Both systems are using the air flow generated by the fan and components are:
Heating element
HIGH SPEED OVEN (HSO)
When in this mode the impingement percentage settled is managed modulating the residual power on the heating element through the power board.
COMBI MODE
When in this mode the heating is managed with a PID algorithm
The heating element is a 2,8KW monophase heating element; it’s positioned around the fan and heat up the air blown from the fan
The heating element is controlled by the Power Board which define, depending on the unit model (standard or boosted), if the heating element has to heat up in parallel or as alternative to the magnetrons.
Fan motor
Fan motor suck the air from the cabinet and blow the air through the heating elements into the cabinet. The air flow will go, for convection, the cooking plate and, for impingement, through the catalysator and then to the ceiling
Fan motor is controlled by the Control Board; there is a power supply and a PWM control.
Default motor speed is 50% possible to adapt to recipes need with steps 10%
Warning disconnection of the control signals make the fan motor start to spin at max speed.
Cooking plate
Cooking plate is the main accessory of the unit and is mandatory to be inserted and oriented as in picture
Being a metal plate to avoid sparks it’s supplied with special spacers that must be in place to avoid microwaves generate sparks between the cooking plate and the cabinet.
Warning: Sparks on the long term can seriously damage the cooking cabinet.
Warning: positioning the cooking plate in the wrong way washable box will be damaged
